Arugula and Parmesan Salad with Lemon Dressing

Light, bright, and easy-to-make, this quick arugula salad recipe pairs the sharpness of fresh Parmigiano-Reggiano cheese and lemon juice for delicious salad.  Be sure you select a good parmesan and use fresh arugula to get the full flavors from this dish. Arugula Salad with Shaved Parmesan

 2 bunches Arugula, washed, dried, and torn
 0.25 cup Extra-Virgin Olive Oil
 0.50 Lemon, juiced
 Salt and freshly ground Black Pepper, to taste
 Chunk of Parmigiano-Reggiano

In a serving bowl, drizzle the arugula with the oil, squeeze in the lemon juice, and sprinkle with salt and pepper. Toss until well mixed and taste for seasoning. Use a vegetable peeler to shave thin pieces of Parmigiano over the top.
