Crisp on the outside, soft and cheesy on the inside, these are dangerously addicting.  But at less than one net carb each, you can indulge guilt free!  As an added bonus they are ridiculously easy to make – just blend, roll and bake!

Cheesy spinach Puffs

 16 oz. package frozen spinach, thawed and drained
 1 cup almond flour
 4 Tbsp salted butter, melted
 2 large eggs
 1/3 cup grated parmesan cheese
 1/3 cup crumbled feta cheese
 1/4 tsp ground nutmeg
 1 tsp kosher salt
 1/4 tsp ground black pepper
 1 tsp garlic powder
 1 Tbsp onion powder
 3 Tbsp heavy whipping cream

Squeeze the spinach in a paper towel to remove as much of the moisture as possible.

Add all of the ingredients to a food processor or blender and puree until smooth.

Chill for 15 minutes (or longer). Form into 1 inch balls and place on a cookie sheet.

Bake at 350 degrees (F) for 12 minutes.

Don’t bake too long or they’ll dry out!
