This revamped waffle recipe focuses on high protein ingredients like eggs, low-fat cottage cheese, and ground flax seeds that get blended up with rolled oats and a splash of vanilla extract to create a seriously good and good-for-you waffle.

Cottage Cheese Oat Waffles

 4 large eggs
 2 cups cottage cheese (low-fat)
 2 tablespoons flaxseed (ground)
 1/4 cup water
 2 cups rolled oats
 1/2 teaspoon vanilla (or almond extract)

Place all ingredients in a blender and blend until evenly mixed and smooth.

Heat a waffle iron.
