 1/4 cup soft tofu
 1/4 cup olive oil
 1/2 teaspoon lemon zest
 1/4 cup lemon juice (from about 1 medium lemon)
 1 teaspoon dijon mustard
 1/2 teaspoon honey
 1/8 teaspoon salt
 1/4 teaspoon black pepper
