Diabetic Almond Shortbread Cookies

 5 tbsp monk fruit erythritol sweetener
 0.50 tsp baking soda
 5 tbsp softened butter
 1 tsp almond extract
 0.50 tsp salt

Preheat the oven to 350°F and line a baking sheet with parchment.

Whisk together the almond flour, monk fruit sweetener, baking soda, and salt in a mixing bowl.
