Make crusty turkey BLT style panini with tomatoes, lettuce and a smear of fat-free mayo. Try it as a surprising new use for those turkey leftovers!

Light Turkey Panini

 1.50 Turkey Bacon
 Nonstick cooking spray
 2.25 lbs skinless, boneless turkey breast
 24 slices whole-wheat bread
 12 tbsp fat-free mayonnaise
 3 cups shredded iceberg lettuce
 12 medium tomato slices

Cook bacon in a skillet over medium heat.

Heat grill and spray with cooking spray. Grill turkey cutlet for 4 minutes on each side until fully cooked. When it is cool enough to handle, slice thinly.

Just before serving, sprinkle chopped walnuts over the top.
