Thai Chicken and Zoodles with Peanut Sauce

Zucchini noodles or "zoodles" are easy to make (or buy pre-spiralized) and will make any dish low carb and gluten free while giving you a way to eat more veggies! This recipe tops the zoodles with a flavorful peanut sauce and chicken breast and crunchy peppers, carrots, and bean sprouts for a zesty meal. Serve for lunch or dinner and you've got a taste of Thai food from your own kitchen!

Chicken and Zoodles with bPeanut Sauce

 2 tbsp grape seed oil
 1 lb chicken breast, chopped
 2 zucchini, spiralized
 1 large carrot, spiralized
 1 red pepper, julienned
 0.33 cup bean sprouts
 0.25 cup fresh cilantro, diced
 0.25 cup green onions, diced
 sesame seeds for garnish
Spicy Peanut Sauce
 1 large garlic clove, minced
 4 tbsp peanut butter
 1 lime, juiced
 3 tbsp coconut aminos, or soy sauce, or tamari sauce
 0.50 tsp ground ginger
 0.25 tsp red pepper flakes

In a small bowl, whisk together garlic, peanut butter, coconut aminos, or tamari, lime juice, ground ginger, and red pepper flakes. Set aside.

Heat a large skillet to medium high heat. Add 1 tablespoon of grape seed oil and chicken breast pieces. Sauté each side for 3-4 minutes. Remove from heat and let sit. Dice when cooled.

In the same large skillet over medium high heat, add 1 tablespoon of grape seed oil, carrot and red pepper. Flash stir fry for 2 minutes, stirring constantly.

In a large bowl add raw zucchini noodles, chicken, carrots, red pepper, bean sprouts, fresh cilantro, green onions, and spicy peanut sauce. Toss till all noodles are coated.

Garnish with sesame seeds and serve!
