Winter Salad with Red Wine Vinaigrette

Winter Salad with Red Wine Vinaigrette

DRESSING
 1 tbsp extra-virgin olive oil
 1 tbsp red wine vinegar
 0.25 tsp sugar
 0.13 tsp paprika
 0.13 tsp dry mustard
 0.06 tsp salt
 Pinch of dried basil
 Pinch of ground red pepper
SALAD
 2 ½ mixed salad greens
 2 torn Romaine lettuce
 1.25 cubed Asian pears (1 large)
 1 chopped Granny Smith apple (1 large)
 0.25 cup thinly sliced red onion
 0.13 cup (1 oz) crumbled goat cheese

Combine dressing ingredients in a bowl, stirring with a whisk.

Combine salad greens, romaine lettuce, Asian pear, apple, and red onion in a large bowl. Drizzle with vinaigrette, and toss well to coat. Sprinkle with crumbled goat cheese. Optionally, add walnuts.
