You've had zucchini and yellow squash, but never like this! This fresh salad takes raw squash and marinades it in a tasty dressing to give a taste of summer in a dish. Squash, sweet red peppers, dill, and garlic mixed together makes a healthy and colorful salad.

  • Yields: 8 1/2 cup servings
Fresh Summer Squash

Directions

1Thinly slice or julienne summer squash, zucchini and red pepper.

2Combine all ingredients and stir. Cover and refrigerate before serving to allow flavors to blend.

2 yellow summer squash

2 zucchini

1 sweet red pepper

1/3 cup diced onion

3 tablespoons vegetable oil

2 tablespoons cider vinegar

1 tablespoon mayonnaise

1 teaspoon sugar

½ teaspoon dill weed

½ teaspoon garlic powder

½ teaspoon celery seed (powder or whole)

¼ teaspoon pepper
